Zucchini Chives Savory Pancake

A bonus post this week because I was craving something new to snack on. Enjoy!
I created this zucchini chives pancake on an afternoon I was feeling hungry but wanted a low carb snack. I happened to have chives on hand but they are not required, you can instead add spinach. The pancakes can be served with any sauce you enjoy. I ate half of these and saved the rest for a future snack.Â
Ingredients (7 pancakes for 1-2 servings)
Zucchini, 200gÂ
Chives, 70g
Chickpea flour (besan), 30gÂ
Baking soda, 0.25 tspÂ
Spices, to taste (turmeric powder, garlic powder, mango amchur powder, chilies, coriander powder, cumin jeera seeds, nigella seeds, salt)Â
Oil of choice, 0.25-0.5 tbspÂ
Optional: Yogurt (dahi) sauce: dahi, 0.5 cups & chipotle peppers (2 tsp)
Instructions
Prepare Batter - grate the zucchini, mix with spices, add chopped chives, add besan, and mix thoroughly. Rest the batter for 5 mins to allow water to release from the vegetables and combine well with the besan.Â
Cook Pancakes - Place a non-stick pan on medium-low heat and lightly oil throughout the pan. Shape a dough ball with wet hands and flatten directly on the hot pan. Cover and cook on each side for 4-5 mins, depending on thickness.Â
Serve with Yogurt (Dahi) Sauce - Whisk together plain yogurt (dahi) with chipotle peppers and serve with pancakes.Â
