Love that you covered this. I love making pav bhaji at home too but also sprinkling some grated cheese in while the butter is melting. I’m going to try adding the zucchini! Normally I use cauli, carrots, potatoes and peas.

Thanks, Perzen! Agree, grated cheese takes it into another level!

I was pleasantly surprised by zucchini in this and have since experimented with others like yellow summer squash or butternut squash with excellent results. The latter gives it a pleasant sweetness.
