Quick question about the king oyster mushrooms: I’ve tried using them before to make “chicken” wings but no matter how long I air fried them, they came out so tough and barely edible. Did I get bad mushrooms? Did I forget to do something to soften them up?

I agree with you that the king oyster mushrooms can get tough. I have cooked them to toughness so many times. I have learned they dry out too fast so it’s good to cook them for a short time only. Broth/sauce based dishes are better with them than what I did here. These were not too bad, soft enough to get a good mouthfeel but they would’ve been more tender if they were in a curry, for example.
